Description

The Clover Club is an elegant and timeless gin cocktail that dates back to the pre-Prohibition era, gaining its name from the Philadelphia men’s club where it first gained popularity. 

A sophisticated tipple, the Clover Club combines gin with raspberry syrup, lemon juice, and egg white, creating a smooth, frothy, and delicately flavoured concoction. 

This cocktail stands out for its beautiful pink hue and silky texture, offering a well-balanced range of flavours between sweet and tart.


Ingredients

  • 2 oz or 60 ml Gin
  • 1/2 oz or 15 ml Raspberry syrup (or raspberry liqueur)
  • 1/2 oz or 15 ml Fresh lemon juice
  • 1 Egg white
  • Ice cubes
  • Fresh raspberries or a lemon twist (for garnish)

Instructions

  1. Mix: Combine the gin, raspberry syrup, lemon juice, and egg white in a shaker.
  2. Dry shake: Shake without ice vigorously for about 15 seconds to emulsify the egg white.
  3. Ice: Add ice to the shaker and shake again until well-chilled.
  4. Pour: Strain into a chilled cocktail glass.
  5. Garnish: Fresh raspberries or a lemon twist.
