  • 2 oz or 60 ml quality Brandy (or Cognac)
  • 1 Whole egg
  • 1/2 oz or 15 ml Simple syrup
  • Freshly grated nutmeg (for garnish)


  1. Mix: Combine brandy, the whole egg, and simple syrup in a shaker.
  2. Shake #1: Dry shake for 30 seconds (without ice) to emulsify the egg.
  3. Shake #2: Add ice and shake again until well-chilled.
  4. Serve: Strain into a glass.
