Ingredients

- 2 oz or 60 ml Blanco Tequila
- 4 oz or 120 ml Pineapple juice
- 1/2 oz or 15 ml Lime juice
- 1/2 oz or 15 ml Simple Syrup (optional)
- Ice cubes
- Lime wheel (for garnish)
Instructions
- Mix: Add the tequila, pineapple and lime juice into a shaker filled with ice.
- Shake: Shake well until the mixture is chilled.
- Serve: Strain into an ice-filled Collins glass.
- Garnish: Add a lime wheel.

The Matador cocktail was invented to showcase the versatility of tequila beyond the classic margarita. Its use of pineapple juice offers a tropical twist.
For me, the optional addition of simple syrup is a no-no as I find it too sweet and overpowers the lime, yet Ingrid prefers it with. Choices, choices!
